The 6 Day Protein Bake Challenge: Day Five

The weekends are for two things: eggs and protein pancakes. But when I want to take on Monday and fight the Monday blues, I find making protein pancakes a fun way to start off the week.  

Vanilla Protein Pancakes:


1 scoop Smart Protein’s Vanilla Whey Protein
1 egg and egg whites from 1 egg
1 cup oats
1 tsp coconut oil
Cutters

Greek yoghurt
Nut butter
ChocShot

1. Mix the oats, vanilla whey protein and egg and egg whites together.
2. Put the coconut oil in a frying pan and if you are using cutters, grease them with coconut oil (It makes it easier to remove the pancakes).
3. Spoon a 1/4 of the mixture onto the pan (or however much covers the cutters you are using) for every pancake. Turn them over when each side is done.

Eat with greek yoghurt,  peanut butter and top with Chocshot. Voila!
